Apple-O

Apple-O is a combination of Cover's Applesauce and flavored gelatin.  Super refreshing in summer and perfect for barbeques, too!  Try it in all the flavors of gelatin;  we haven't come across one we haven't liked yet.

Ingredients

8 (1/2 cup) Serving size box of flavored gelatin (Strawberry is a good starting point)

2 Cups boiling water

3 Cups Cover's Applesauce

Directions

Mix flavored gelatin with the 2 cups of boiling water until completely dissolved.  Mix in the applesauce.  Refrigerate until firm, about 4 hours.

Some ideas:  top with whipped topping, add chopped nuts, pour into fancy glasses for individual servings.

 
Oats and Apple Casserole

This warm and filling breakfast is easy to customize to your family's tastes.  Try the suggestions  or make up your own unique creation!   This recipe makes it easy to cook for a crowd with ease because it's easy to scale up.

Ingredients:

4 cups milk
1/2 cup packed brown sugar
2 teaspoons butter
1/2 teaspoon salt
1 teaspoon ground cinnamon
2 cups old-fashioned oats
2 cups chopped, peeled apples (make them as chunky or as fine as you like!)

Suggestions to add:

1 cup chopped walnuts
1 cup raisins
1 cup wheat germ
1/2 teaspoon ground nutmeg
1/2 cup blueberries
Decrease milk to 3 1/2 cups and add 1/2 cup of sour cream

Heat oven to 350'F.  Grease a 2-qt casserole dish. Heat the milk, sugar, butter, salt and cinnamon in a pan just until hot.  Mix together with oats and apples, and any other ingredient you want to add.  Place into casserole dish and make sure it's spread evenly if needed.  Bake for approximately 45 minutes or until golden and warm.  Try putting some cream or jam over the top when serving.  This will have the consistency of oatmeal - if you want it more chewy, decrease the milk.

 
Grilled Apples

The next time you are BBQing, try this unusual side dish.  It is super easy and pairs nicely with chicken or pork.

You'll need:

One apple* per serving, cut in half lengthwise, cored.

Cinnamon and/or sugar

No-stick spray

After preparing the apples, sprinkle with cinnamon and sugar, if desired, on cut side.  On a medium hot grill, apply no-stick spray to the skin side of apple halves and immediately place apples on the grill.  Cook to desired doneness and flip.  Grill cut side just long enough to get the juices flowing.  Serve hot.

 

*Firm, tart apples are best, but most will work.
